Harumaki | Japanese Spring Rolls

Introduction

Harumaki, or Japanese spring rolls, are crispy golden parcels filled with a savory mix of vegetables and meat. Served hot with a dipping sauce, they are a popular appetizer and side dish in Japanese homes and restaurants.

Ingredients (for 8 rolls)

  • 8 spring roll wrappers
  • 100g ground pork or chicken
  • 1/2 carrot, julienned
  • 1/2 onion, thinly sliced
  • 1/2 cup cabbage, shredded
  • 3–4 shiitake mushrooms, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch (dissolved in 2 tsp water)
  • Oil for frying

Instructions

  1. Cook the filling
    • Heat oil in a pan, add meat and cook until browned.
    • Add carrot, onion, cabbage, and mushrooms. Stir-fry until tender.
    • Season with soy sauce, oyster sauce, and sesame oil.
    • Add cornstarch slurry to thicken slightly. Let cool before wrapping.
  2. Wrap the spring rolls
    • Place a wrapper diagonally. Spoon filling near the bottom corner.
    • Fold over once, then fold in the sides, and roll tightly.
    • Seal the edge with a dab of water-flour paste.
  3. Fry
    • Heat oil to 170–180°C (340–355°F).
    • Fry rolls until golden brown and crisp, about 3–4 minutes.
    • Drain on paper towels.
  4. Serve
    • Plate with fresh lettuce and serve with sweet chili or soy-vinegar dipping sauce.

Tips

  • Make sure the filling is cool before wrapping to avoid soggy rolls.
  • Fry in small batches to keep oil temperature steady.
  • Wrappers can be found in the frozen section of Asian supermarkets.
