Pork Curry | Japanese Style Curry with Pork

Pork Curry is a comforting Japanese dish featuring tender pieces of pork simmered in a rich, mildly spiced curry sauce. Unlike Indian curries, Japanese curry is thicker, slightly sweet, and pairs perfectly with steamed rice. Ingredients

  • 400 g pork shoulder or belly, cut into bite-sized pieces
  • 2 onions, sliced
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • 2 tbsp vegetable oil
  • 3 cups water
  • 1 package Japanese curry roux (medium-hot or your preferred spice level)
  • Steamed rice, for serving

Instructions

  1. Heat oil in a large pot and sauté pork until lightly browned.
  2. Add onions, carrots, and potatoes, and cook until slightly softened.
  3. Pour in water, bring to a boil, then reduce heat and simmer until ingredients are tender.
  4. Break curry roux into pieces and stir into the pot. Simmer until thickened.
  5. Serve hot over steamed rice.

  • Use pork belly for a richer flavor or lean pork shoulder for a lighter taste.
  • Add apple or honey for extra sweetness and depth.
  • For a healthier version, substitute brown rice or barley rice.
