Zaru Soba | Japanese Cold Buckwheat Noodles

Zaru Soba is a refreshing Japanese noodle dish, perfect for warm weather. Made from buckwheat flour, soba noodles are boiled, cooled in ice water, and served on a bamboo tray (zaru) with dipping sauce (tsuyu). The tsuyu is typically made from soy sauce, mirin, and dashi, and is enjoyed with toppings like chopped green onions, grated wasabi, and shredded nori.

Ingredients

  • 200 g dried soba noodles
  • 1 sheet nori (seaweed), cut into thin strips
  • 2 green onions, finely chopped
  • Wasabi, to taste
  • Ice water, for cooling noodles

For dipping sauce (tsuyu):

  • 200 ml dashi (Japanese soup stock)
  • 50 ml soy sauce
  • 50 ml mirin

Instructions

  1. Cook soba noodles in boiling water according to package directions.
  2. Drain and rinse under cold running water, then place in ice water to chill.
  3. Prepare dipping sauce: combine dashi, soy sauce, and mirin in a saucepan and bring to a gentle boil. Cool before serving.
  4. Arrange soba on a bamboo tray (zaru), topped with shredded nori.
  5. Serve with dipping sauce, green onions, and wasabi on the side.

Tips

  • Rinse soba thoroughly after boiling to remove excess starch and improve texture.
  • For a stronger flavor, add grated ginger or a dash of sesame seeds to the dipping sauce.
  • Soba pairs well with tempura for a more filling meal.
