Nikusui | Japanese Beef Soup

Nikusui is a comforting Kansai-style soup made with thinly sliced beef simmered in a light dashi-based broth. The name literally means ā€œbeef in soup,ā€ and it’s a simple yet flavorful dish often enjoyed in Osaka. The savory beef, soft tofu, and green onions blend perfectly with the delicate soy sauce–seasoned broth, making it a warming and satisfying bowl. Traditionally served with rice or udon on the side, Nikusui is loved as both a casual everyday meal and a soothing dish when you’re feeling under the weather.

Ingredients

  • 150 g thinly sliced beef (ribeye or chuck)
  • 1 block soft tofu (cut into cubes)
  • 3 cups dashi broth
  • 2 Tbsp soy sauce
  • 1 Tbsp mirin
  • 1 Tbsp sake
  • 1 tsp sugar
  • 2–3 green onions (sliced)

Instructions

  1. Prepare dashi in a pot and bring to a gentle simmer.
  2. Season with soy sauce, mirin, sake, and sugar. Adjust taste as needed.
  3. Add tofu and simmer for 2–3 minutes.
  4. Add beef slices and cook briefly until just tender.
  5. Top with green onions and serve hot.

Tips

  • Use high-quality thin beef slices (like sukiyaki-style) for the best flavor.
  • Don’t overcook the beef—just let it gently poach in the hot broth.
  • For a heartier version, add udon noodles directly into the soup.

  • Pair with a bowl of steamed rice for a complete meal.
  • Serve alongside pickled vegetables or a light salad.
  • A sprinkle of shichimi togarashi adds a spicy kick.
