Zunda Mochi | Sweet Soybean Paste Rice Cake

Zunda Mochi is a traditional dessert from the Tohoku region of Japan, especially famous in Sendai. It consists of soft, chewy rice cakes (mochi) topped with or wrapped in a paste made from boiled edamame (young soybeans), sugar, and a touch of salt. The bright green color and refreshing flavor of the zunda paste make it a popular seasonal sweet, often enjoyed during summer or autumn. This treat combines the natural sweetness of soybeans with the rich texture of mochi, offering both nutrition and comfort.

Ingredients

  • 1 cup edamame (shelled, boiled, and peeled)
  • 2 tbsp sugar (adjust to taste)
  • A pinch of salt
  • 4 small pieces of plain mochi (store-bought or homemade)

Instructions

  1. Boil the edamame until tender, then remove the skins.
  2. Mash the edamame in a mortar and pestle (or food processor) until smooth.
  3. Mix in sugar and a pinch of salt, adjusting to taste.
  4. Cook or toast the mochi until soft.
  5. Coat the mochi with the zunda paste or serve with paste on top.
