Introduction
Matsutake Gohan is a seasonal Japanese rice dish made with matsutake mushrooms, one of Japan’s most prized autumn ingredients. The distinctive, earthy aroma of matsutake is gently infused into the rice, creating an elegant and comforting dish that highlights the essence of Japanese fall cuisine.
Ingredients
- 2 cups Japanese short-grain rice
- 1 small matsutake mushroom
- 2 cups dashi (Japanese soup stock)
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake
- Optional garnish: mitsuba (Japanese parsley) or thin carrot slices
Instructions
- Rinse the rice until the water runs clear and soak for 20–30 minutes. Drain well.
- Gently wipe the matsutake mushroom with a damp cloth and slice thinly.
- Add rice to a rice cooker or pot. Pour in dashi, soy sauce, mirin, and sake.
- Place the sliced matsutake on top of the rice (do not mix).
- Cook the rice as usual.
- Once cooked, gently fluff the rice to distribute the mushrooms evenly.
- Garnish with mitsuba or decorative carrot slices before serving.
Tips
- Avoid washing matsutake with water to preserve its aroma.
- For a richer flavor, you can add a small piece of fried tofu (aburaage).
- Serve with miso soup and simple side dishes to let the aroma stand out.
